I found my time there enjoyable enough. My co-workers were amazing, I still keep in touch with them to this day. Tips were crazy good, especially at the initial opening, I couldn't tell you what the tip average was once the novelty wore off, although I did hear some servers say there was a sharp decline. Tip-out was fine for a small town. I made about 300 bi-weekly. Overall, not much room for growth there. They don't like promoting from within, instead just hiring servers with 5+ years of experience to reduce training time. I feel this may have been part of the reason for the high turnover there. I'd say if this is your introduction to the industry, hosting there would be a great fit for most people. It gets you prepared for fast-paced service and teaches you how to manage large wait times and how to control the flow of a larger restaurant. Expediting there will also prepare you for most corporate restaurants, as they follow the same procedures as Earls. I noticed they copy Earls for most of their operations (training, food handling/processing, rules/regulations, food items).
