Step Into a Leadership Role at Ottawa’s Newest Dining Destination
Ruby’s is seeking a skilled, organized, and motivated Sous Chef to join our opening team. This position is primarily evening-based and plays a critical leadership role in ensuring smooth dinner service, strong team performance, and proper kitchen closing procedures.
Working closely with the Head Chef, you will oversee kitchen operations in their absence, support service execution, and help foster a positive, professional kitchen culture from day one.
This is an excellent opportunity to be part of a new restaurant launch and grow into a senior leadership role.

What You’ll Do
Evening Service Leadership
Assist Chef to lead and oversee dinner service to ensure smooth, efficient execution
Maintain consistency in quality, presentation, and timing
Support and direct the line during peak service periods
Step into full kitchen leadership in the absence of the Head Chef
Operational Oversight & Closing Procedures
Ensure the kitchen is properly cleaned, organized, and closed each night
Confirm prep levels and station readiness for the following day
Maintain detailed communication with the Head Chef regarding service performance and operational needs
Monitor food quality, waste control, and station efficiency
Team Development & Kitchen Culture
Foster a positive, respectful, and accountable kitchen environment
Mentor line cooks and junior team members
Support training and performance development
Promote strong BOH teamwork and collaboration with FOH leadership
Food Safety & Standards
Uphold the highest standards of cleanliness and organization
Ensure compliance with health and safety regulations
Monitor proper labeling, rotation, and food handling procedures
What We’re Looking For
2+ years of experience as a Sous Chef or strong Junior Sous Chef in a quality-driven, full-service kitchen
Strong leadership skills and ability to confidently run service
Experience with dinner-focused, high-volume service
Solid culinary foundation with attention to detail and consistency
Strong organizational and communication skills
Ability to problem-solve and make decisions under pressure
Positive attitude and team-first mindset
Culinary diploma is an asset but not required
