Job Description:
A Sous Chef assists the Executive Chef in running the kitchen smoothly and efficiently. They ensure the food is prepared to the highest standards, supervise kitchen staff, and help maintain inventory and cleanliness. A Sous Chef should have strong leadership, organizational, and culinary skills, along with the ability to work under pressure.
Key Responsibilities
Supervising Kitchen Staff:
- Manage and direct kitchen staff, including cooks, prep staff, and dishwashers.
- Assign tasks and ensure the team follows recipes and procedures correctly.
- Provide guidance, support, and training to kitchen staff.
Food Preparation and Cooking:
- Assist in food preparation, including chopping, cooking, and plating.
- Ensure food is prepared to meet quality standards and is consistently served in a timely manner.
- Oversee specific stations (e.g., grill, sauté, pastry) during peak hours.
Quality Control:
- Monitor the quality of food being prepared, ensuring consistency and portion control.
- Ensure all dishes are presented attractively and meet restaurant standards.
Inventory Management:
- Assist with inventory control, including stock rotation and ordering of supplies.
- Ensure proper storage of ingredients to maintain freshness and safety.
- Help track waste and ensure efficient use of ingredients.
Maintaining Health and Safety Standards:
- Ensure the kitchen complies with food safety regulations and sanitation standards.
- Monitor cleanliness and organization of kitchen and storage areas.
- Enforce safe food handling practices and proper use of kitchen equipment.
Collaboration with Executive Chef:
- Assist the Executive Chef in menu planning and recipe development.
- Step in for the Executive Chef when needed (e.g., when they are off or absent).
- Help with food costing and budgeting to ensure profitability.
Handling Special Requests:
- Manage special dietary requests, allergies, or other guest needs.
- Ensure flexibility in preparing dishes to accommodate customer preferences.
Communication:
- Coordinate with front-of-house staff to ensure orders are completed correctly and on time.
- Keep the kitchen team informed about any special events, menu changes, or VIP guests.
Leadership and Motivation:
- Maintain morale and keep kitchen staff motivated, especially during high-pressure periods.
- Lead by example, demonstrating a strong work ethic and commitment to quality.
Skills and Qualifications:
- Culinary degree or equivalent experience.
- Proven experience as a Sous Chef or in a leadership role within a kitchen.
- Strong understanding of food safety and kitchen procedures.
- Ability to work in a fast-paced environment and handle stress.
- Excellent communication and organizational skills.
- Leadership qualities with the ability to motivate and manage staff.
Physical Requirements:
- Ability to stand for long periods and work in a fast-paced environment.
- Ability to lift heavy items (e.g., pots, boxes of supplies).
- Comfort with working around hot surfaces and sharp kitchen tools.
