Job Description

Job Title: Sous Chef

 

Management Level: Lower Management

 

Reporting To: Chef de Cuisine, General Manager or designate 

 

Salary: $24-26 hourly, + tips, +4% vacation pay

Job Overview:

The Sous Chef at Utamami supports the Chef de Cuisine in leading the kitchen with excellence, creativity and consistency. This role requires a dedicated culinary professional who can uphold the restaurant’s blend of comforting Italian influences and refined Japanese-inspired techniques while fostering a respectful and collaborative work environment.

 

Job Requirements:

  • Minimum of 2 - 5 years of experience in a professional kitchen with at least 1 year in a leadership or senior cook position.

  • Strong foundation in Japanese, Italian, or fusion cuisine, with demonstrated skill in blending diverse culinary traditions.

  • Proficiency in knife skills, cooking techniques, station management and quality control

  • Deep understanding of flavour balance, plating aesthetics and presentation during high-volume service

  • Support, motivate and mentor line and prep cooks

  • Ensure that kitchen operations are up to standards set by The Company. 

  • Clearly communicates tasks and duties while giving constructive feedback when necessary

  • Maintain awareness for labour costs and food inventory

  • Assist with inventory management, ordering, receiving and waste reduction

  • Ability to execute menu items accurately and consistently according to recipes and standards

  • Contribute ideas during menu development and seasonal updates

  • Have a strong sense and understanding of dietary restrictions and allergen management 

  • Comprehensive knowledge of food safety regulation, HACCP standards and safe kitchen practices

  • Enforce sanitation protocols, equipment maintenance routines and health inspections.

  • Food Handler Certification required; Red Seal credentials are considering an asset

  • Be passionate and proud about hospitality and creating memorable guest experiences through food

  • Thrives under pressure with a solution-oriented mindset, remaining adaptable in high-volume service while demonstrating strong composure, emotional control, and the ability to prevent disagreements from affecting service standards.

Work Hours:

  • Must be available to work an average of 30-44.5 hours weekly.

  • Ability to work flexible shifts; days, evenings, weekends and holidays.

 

Physical Demands:

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. This position requires standing for up to 8 hours per shift, walking, bending, kneeling, stooping, and climbing all day. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. This position also requires lifting up to 25lbs from floor to waist, waist to shoulder and shoulder to above head. This position also required twisting, turning, and reaching.
