Senior Pastry Chef Production Manager is a driving force behind the production operations of Blacksmith Bakery. The Production Manager is a leader of our Pastry Production Facility and is responsible for delivering the highest quality consistent pastry and desserts for all Blacksmith Bakery locations.
Primary Duties:
• To uphold the culinary concepts of Blacksmith Bakery while performing positional responsibilities and adhering to company policies and procedures.
• Treat every customer, subordinate, partner and vendor with respect & dignity.
• Manage pastry production and delivery to our 4 locations, meet daily production targets.
• Have own transportation and be available to travel between multiple operations.
• Ensure the highest levels of cleanliness and organization are maintained in the kitchen at all times.
• Oversee kitchen safety. Educate staff on safety and accident prevention.
• Oversee daily kitchen shift aids and cleaning checklists.
• Communicate the status of all pastry food production to the Executive Pastry Chef.
• Ensure the proper execution of all the Executive Pastry Chefs recipes.
• Must participate in production counts, ordering and costing.
• Conduct product checks and oversee production process for all shifts to ensure quality.
• Ensure proper and timely execution of all pastry service, expedites when necessary.
• Ensure that all policies and procedures for receiving, storage and rotation are being followed.
• Lead by example, mentor and develop the production team.
• Perform other job related activities as required or assigned by the Executive Pastry Chef.

Qualifications and Knowledge:
• Experienced in large quantity pastry preparation and excellent knowledge of dessert operations.
• Production kitchen management experience.
• Excellent artistic and creative pastry and pastry finishing skills are required.
• Ability to taste all desserts to assure correct preparation.
• Able to train subordinates in all of Blacksmith Bakery matters and entire pastry production.
• Must possess the ability to communicate via written and oral English.
• Must be able to present critical information and data to the executive team in a timely manner.
Education and Experience:
• Foodsafe Permit is necessary.
• Culinary degree or foreign equivalency (3-year apprenticeship) and work experience, as a Pastry Chief in a similar
• high-volume operation is required.
• Production Management experience in a commercial production kitchen facility.
• Must have proficient math skills and be capable of operating job specific software and applications.
Other Requirements:
• Able to lift and carry up to 50lbs safely and also be able to work standing.
• Available to work very early mornings, weekends, holidays and long days as necessary.
• Available to work a preliminary Stage with the Executive Chef for evaluation purposes.
