Ellipsis is a modern drinking house located in Vancouver’s Waterfall Building.
We operate an all-day beverage program that integrates coffee, cocktails into one cohesive system.
We are looking for a Bar Manager to lead the bar program from product development through operational execution, building a structured, consistent, and scalable system.
This role is focused on translating concept into execution: taking direction, refining it, and delivering it at a high standard through systems, prep, and team training.
Key Responsibilities
Bar Program Development & Execution
Lead development of cocktails and coffee-based drinks within a defined direction
Translate ideas into clear, repeatable recipes and prep systems
Design and manage batching, prep workflows, and station setup
Maintain consistency in flavour, presentation, and execution
Oversee quality control across all beverages
Operations & Product Control
Manage inventory, ordering, and supplier coordination
Oversee raw material handling, storage, and product quality
Monitor usage, waste, and cost control (COGS awareness)
Maintain par levels, organization, and FIFO practices
Support menu costing and updates
Team Leadership & Training
Train, mentor, and develop the bar team
Build clear standards for drink execution and workflow
Establish a structured and consistent training system
Support hiring and onboarding
Service Leadership
Lead and support service on the floor with a strong presence and awareness
Maintain a high standard of guest experience across the space
Manage service flow, pacing, and coordination between bar and floor
Work seamlessly between bar operations and floor service
Step into a service leadership role when required, including acting as MOD
What We’re Looking For
Strong experience in cocktail development and bar operations
Ability to build systems (prep, workflow, consistency), not just create drinks
Strong understanding of flavour, balance, and ingredients
Experience with inventory, ordering, and cost control
Detail-oriented and consistency-driven
Calm, practical, and solution-focused
Open to working across both coffee and cocktail formats
Requirements
3–5+ years experience in cocktail-focused environments
Previous leadership experience (Bar Manager / Lead Bartender / Head Bartender)
Experience contributing to or managing a bar program
Strong operational awareness
Legally eligible to work in Canada
Bonus
