Sous Chef
New South Granville Cocktail Bar Concept

A new cocktail-forward concept is opening in South Granville, and we’re looking for a Sous
Chef to help shape our culinary identity. This is an opportunity to collaborate on a menu that
pairs beautifully with an expertly crafted cocktail program—bold flavours, thoughtful plating, and
high-quality ingredients at the forefront.
As a Culinary Leader, you will directly impact the success of this business by delivering on the
overall experience and value for the community and your team. In this role, you will be
responsible for attracting, retaining, and mentoring a dynamic and fearless team of individuals.
What You’ll Do:
● Work closely with the Head Chef to execute a menu that complements the bar program.
● Maintain the highest standards of quality, consistency, and presentation.
● Assist with menu development, bringing creativity and technique to every dish.
● Lead by example, maintaining a clean, organized, and efficient kitchen.
● Participate in the hiring process for all kitchen roles. Train and mentor junior cooks,
fostering a positive and professional kitchen culture.
● Oversee inventory, ordering, and food costs in collaboration with the Head Chef.
● Engage with guests to gather feedback and enhance their dining experience.
● Address any culinary concerns promptly and professionally.
● Ensure all team members are working within our safety procedures through the
implementation of training.
● Adhere to all Health & Safety/Risk Management programs, including OH&S
documentation.
● Assist with scheduling and payroll.
● Create training guidelines and standard operating procedures.
● Build menu engineering plans and supporting documentation.
● Monitor and assess food costs, maintaining all necessary documentation to accurately
track the cost of goods and enhance profitability.
● Review historical data and daily forecasting to guarantee appropriate product and
inventory levels.
● Minimize waste through efficient food preparation and storage practices.
What You Bring:
● 3+ years of experience in a professional kitchen, preferably in a Chef de Partie or Sous
Chef role
● A strong understanding of flavour profiles and how they interact with cocktails
● A passion for high-quality ingredients, technique, and presentation
● Ability to work efficiently in a fast-paced, high-energy environment
● A team-oriented mindset with leadership experience a strong asset
