Job Description

Lumache is known for its dedication to handmade pasta, artisanship and high quality ingredients and production.

We are seeking an ambitious Sous Chef to join our culinary team. The ideal candidate will be responsible for preparing and presenting high-quality dishes, ensuring exceptional food service, and maintaining the highest standards of food safety and sanitation. This role offers an exciting opportunity to grow and develop in a fast paced kitchen with excellent standards.

Compensation

Starting salary range is $45 000 - $60 000 CAD based on experience and on a 50 hour work week, payable biweekly.

This position will be included in the tip pool based on hours worked. There will also be a included daily meal benefit included per shift.

The Sous Chef is entitled to 15 days ( 3 work weeks) of paid vacation per year, these vacations should be taken during the restaurants planned closure periods, any other vacation requests will be considered at the discretion of management.

Responsibilities

  • Food Preparation and line cooking
  • Equipment cleaning and maintenance
  • Dishwashing and order receiving
  • Organization and systems management
  • Upholding a high standard of quality and food safe protocols
  • Recipe development
  • Training and Supporting staff
  • Assisting the Front of House team when required

Qualifications

  • Proven experience in food preparation, cooking, or related roles within a restaurant or food service environment
  • Food safe certification
  • Excellent skills in meal preparation and presentation with attention to detail
  • Ability to work efficiently under pressure in a fast-paced setting while maintaining high-quality standards
  • Knowledge of the food industry trends and best practices in kitchen operations
  • Ability to work cooperatively and respectfully with coworkers and guests
  • Ability to organize, prioritize and follow through as necessary
  • Minimum of 3 years experience in a Supervisory Role
  • This role will have an expected start date of Mid May
  • Experience in Italian food is a bonus!
